  • • Baking soda — 1 tsp
  • • Salt — 1 tsp
  • • Sugar — 2 tbsp
  • • Buttermilk — 400 ml
  • • Butter — 30 g

    Preheat oven and prepare pan
    Preheat oven to 200°C (400°F), line or grease the loaf pan and sprinkle a light dusting of flour or place parchment so the loaf releases easily.

    Mix dry ingredients
    In the large bowl whisk flour, baking soda, salt, and sugar until evenly distributed.

    Combine wet and form loaf
    In the small bowl mix buttermilk and melted butter, pour into dry mix and stir with no more than 20–30 strokes until just combined; turn dough into a floured surface, shape to fit the pan, and score the top 1 cm deep.

    Bake and brief cool
    Bake at 200°C (400°F) for 25 minutes, then cool in the pan for 5 minutes; transfer to a rack and check that a skewer inserted in the center comes out clean.
