Safely Thawing a Frozen Thanksgiving Turkey

by MASTER
A frozen turkey needs about one day in the fridge for every 4–5 lb (1.8–2.3 kg), so a big bird has to go in nearly a week before Thanksgiving. Use this plan once you've bought the bird to pick your start day, set up the fridge, and confirm it's fully thawed before cooking day.

Safely Thawing a Frozen Thanksgiving Turkey

Count backward from cooking day

The USDA rule is 24 hours of fridge time per 4–5 lb (1.8–2.3 kg). Work from the weight on the label and round up. Then add one buffer day, because large birds and very cold fridges run slow.

  • 8–12 lb (3.6–5.4 kg): 2–3 days, start Sunday or Monday
  • 12–16 lb (5.4–7.3 kg): 3–4 days, start Saturday or Sunday
  • 16–20 lb (7.3–9 kg): 4–5 days, start Friday or Saturday the week before
  • 20–24 lb (9–11 kg): 5–6 days, start Thursday or Friday the week before

The day names assume a Thursday dinner. For a Canadian Monday Thanksgiving or a Christmas bird in the UK or Australia, count the same number of days back from your own cooking day. A thawed turkey keeps 1–2 more days in the fridge, so finishing early is safe and finishing late is the real problem. Set a phone reminder for the start day right now.

Why the fridge, and why the bottom shelf

The fridge keeps the outer meat at 40°F (4°C) or below while the center thaws, so bacteria never get a warm window. On the counter or in the garage, a turkey thaws from the outside in, and the surface sits in the danger zone for hours. Leave it in its original wrapper and set it breast-side up in a rimmed pan on the lowest shelf. Raw turkey drips, and the bottom shelf keeps juices off salads and desserts. Check the fridge with a thermometer and aim for 35–38°F (2–3°C). A fridge running at 33°F (0.5°C) is safe but can add a day.

If you're short on time or fridge space

  • Cold-water thaw (behind schedule): seal the bird in a leak-proof bag and submerge it breast-down in cold tap water in a clean sink or cooler. Swap in fresh cold water every 30 minutes. Allow about 30 minutes per lb (about 1 hour per kg), so roughly 8–10 hours of water changes for 16–20 lb. If your tap water runs warm, as in an Australian summer, add ice so the water stays cold to the touch. Cook the bird as soon as it's thawed.
  • Cooler with ice (fridge full): keep the bird wrapped and surround it with ice. Check the thermometer inside every morning and evening, and drain the meltwater and add ice whenever it creeps toward 40°F (4°C).
  • Cook from frozen (last resort): this is safe, but it takes about 50% longer. You can only pull the giblets out partway through roasting, with tongs. Confirm 165°F (74°C) with a meat thermometer in the thickest part of the thigh and breast.

Skip the microwave for anything over about 12 lb (5.4 kg). Most won't fit it, and it cooks the edges while the middle stays frozen.

How to tell it's done, and what to do if it isn't

Don't trust the calendar alone. A thawed bird has a soft breast and thighs when pressed, the legs wiggle at the joints, and the neck and giblet bag come out without tearing. A few ice crystals deep in the cavity are fine; run a gentle stream of cold water inside to clear them, keeping the splash low. Then wash the sink and nearby counter with hot soapy water.

If the bird is only icy at the center the evening before, leave it in the fridge. Start a cold-water finish at first light on cooking day; a partly thawed bird usually needs 2–4 hours. If it's still rock-hard on the morning before cooking day, you have two choices. You can cold-water thaw it that day and roast it that evening, then carve, chill and reheat the meat to 165°F (74°C) on the day. Or you can plan to roast from frozen with the extra 50% time.

現在
A rock-hard frozen turkey is sitting in the freezer and you haven't worked out what day it needs to move to the fridge or where it will fit.
難関
First-timers usually start counting from Monday of Thanksgiving week and find a 20 lb (9 kg) bird still icy inside on Thursday morning. Others discover the night before that a packed fridge never had room for a roasting pan on the bottom shelf.
希望
By the day before cooking, the turkey is soft at the breast and thighs, the giblets are out, and it's sitting cold in the fridge with no ice left in the cavity.
対応指針
  • When you press the thigh the evening before cooking day and it's still firm or the giblet bag won't come out
    →
Leave it in the fridge overnight, then start a cold-water finish at first light on cooking day, changing the water every 30 minutes (usually 2–4 hours for a partly thawed bird), and roast it as soon as the giblets come out.
  • When the bird is fully thawed 3 or more days before you plan to cook
    →
Keep it in the fridge at 40°F (4°C) or below and cook it within 2 days, or move your roast earlier; a fridge-thawed bird that never warmed up can also be refrozen raw, with some loss of texture.
  • When the fridge is too full for the pan on the bottom shelf
    →
Move drinks and sturdy produce to a cooler with ice to free up the space instead of putting the turkey on a higher shelf above ready-to-eat food.

ステップ
  1. 01
    Calculate your fridge start day
Divide the label weight in pounds by 4 (or the kilograms by 1.8) to get the number of days, round up, add one buffer day, count back from cooking day, and set a phone reminder.
    ⏱ 5分
  2. 02
Clear and check the bottom fridge shelf
The night before your start day, empty a space as wide as your roasting pan on the lowest shelf and leave a thermometer there overnight to confirm it reads 35–40°F (2–4°C).
    ⏱ 10分
  3. 03
Move the turkey into the fridge
Keep it in its original wrapper, set it breast-side up in the rimmed pan, and push it to the back of the bottom shelf where it's coldest and out of the way.
    ⏱ 5分
  4. 04
    Check the bird each day
Press the breast and thigh through the wrapper and blot any juice pooling in the pan with paper towels; if the bird still feels solid two days out, plan a cold-water finish.
    ⏱ 3分
  5. 05
Confirm it's thawed and remove the giblets
In the sink, pull the neck and giblet bag from both cavities, clear any leftover ice with a gentle stream of cold water, pat dry, return the bird to the fridge in a clean pan, and wash the sink and counter with hot soapy water.
