A sealed mason jar with dressing on the bottom, then grain, protein, sturdy veggies, and greens on top, labeled with date and contents and ready to refrigerate or transport.

  • • Mixed salad greens — 2 cup
  • • Cherry tomatoes — 6 count
  • • Cucumber — 1/2 cup
  • • Cooked grain — 1 cup
  • • Cooked protein — 1 cup
  • • Olive oil — 2 tbsp
  • • Vinegar — 1 tbsp
  • • Dijon mustard — 1 tsp
  • • Salt — 1 pinch

  • • Mason jar (or 16 oz jar) — 1
  • • Cutting board — 1
  • • Chef's knife — 1
  • • Measuring spoons — 1 set
  • • Small bowl or small jar — 1
  • • Clean towels or salad spinner — 1

    Gather ingredients and tools
    Collect the jar, cutting board, knife, measuring spoons, small bowl, greens, vegetables, cooked grain, protein, and dressing ingredients and place them within arm's reach on the counter.

    Wash and dry produce
    Rinse greens and vegetables under cold water, then spin or pat dry with clean towels until there are no visible water droplets on the leaves.

    Chop and measure components
    Cut tomatoes, cucumber, and other vegetables into bite-size pieces, measure 1 cup cooked grain and 1 cup protein into prep bowls, and portion 2 cups of greens.

    Mix dressing
    Combine 2 tbsp olive oil, 1 tbsp vinegar, 1 tsp Dijon mustard and a pinch of salt in a small jar or bowl and shake or whisk for 30 seconds until emulsified.

    Layer, seal, and label
    Pour dressing into the bottom of the mason jar, add cooked grain, add protein, add sturdy vegetables, top with greens, screw the lid on, write the date and contents on a sticker, and wipe the jar rim and counter.
