Obstacle
I struggle to measure ingredients by weight and sometimes end up with a starter that is too stiff or too runny; I also forget to note the feeding time and storage temperature.
Expectation
Starter will be fed, mixed, labeled, and stored at the desired temperature so it begins forming visible bubbles and shows rise within 6–12 hours.

Steps
- 01Prepare workspace and toolsClean the jar and spatula, place the scale on a flat surface, and set out flour and water so everything is within reach.⏱ 2 min
- 02Weigh and discardWeigh the current starter in the jar, discard down to 25 g of starter (or transfer 25 g to a clean jar) so you have the correct base for feeding.⏱ 3 min
- 03Weigh, add, and mix feedWeigh 50 g flour and 50 g water, add both to the 25 g starter, mix with the spatula until homogenous and free of dry pockets.⏱ 5 min
- 04Label and storeWipe the jar rim, loosely close the lid, mark the feeding time and room temperature on the jar, then place the jar where it will be stored.⏱ 5 min
