Pumpkin Pie from Scratch

by MASTER
A homemade pumpkin pie is the classic dessert people are asked to bring to Thanksgiving, and the custard and crust each have a couple of traps. Doing one practice bake a week or two before Thanksgiving means you show up with a pie you already know works.

Pumpkin Pie from Scratch

Cold butter, and a head start on the crust

A flaky crust comes from visible pea-sized pieces of cold butter that steam and puff in the oven. Cut a 1/2 cup (113 g) stick into cubes and put it in the freezer for 10 minutes before you start. Add ice water 1 tablespoon at a time and stop as soon as a handful of dough holds together when squeezed. It should look shaggy in the bowl, not smooth. Extra water and kneading make a tough, shrinking crust. Experienced bakers make the dough 1-2 days ahead, wrap the disk, and refrigerate it. On Thanksgiving week this is the single biggest time saver. If you're short on time, a store-bought refrigerated or frozen deep-dish crust is a perfectly acceptable shortcut. Just still blind-bake it.

Why the shell bakes before the filling goes in

Pumpkin filling is a wet custard. Poured into raw dough, it soaks in before the bottom can set, and you get a soggy, pale bottom. Blind-baking the shell first gives it a dry, lightly golden base. Fit the dough into the plate and chill it for 30 minutes before baking. Cold dough slumps and shrinks far less. Line it with parchment and fill it to the rim with pie weights or dried beans, because half-filled weights let the sides slide down. Bake on the lower-middle rack so the bottom gets the most heat. Use the blind-bake time to whisk the filling so both are ready together. Then set the shell on a rimmed baking sheet in the oven and pour the filling there, so you never carry a brimming pie across the kitchen.

Pull it while it still jiggles

The most common first-timer mistake is baking until the center is firm. Custard keeps cooking as it cools. A pie that is firm in the oven cracks and turns grainy on the counter. Gently nudge the plate. It's done when the outer edge is set and puffed slightly and a 2-inch (5 cm) circle in the middle wobbles like gelatin but doesn't ripple like liquid. An instant-read thermometer in the center should read about 175°F (80°C). A knife inserted halfway between edge and center should come out clean.

Regional notes and planning the day

  • In the US and Canada, buy 100% pure pumpkin (15 oz / 425 g can), not "pumpkin pie filling," which is already sweetened and spiced.
  • In the UK and Australia, canned pumpkin is sold in larger supermarkets or online. Otherwise, roast and purée butternut squash (or Kent/jap pumpkin in Australia), then drain it in a sieve for 30 minutes until it's as thick as canned. If you can't find pumpkin pie spice, use the individual spices listed. UK mixed spice works in a pinch.
  • The temperatures here are for conventional ovens. With a fan/convection oven, set it 20°C (25°F) lower, for example 200°C fan instead of 220°C.
  • Bake the pie the day before Thanksgiving. It needs at least 2 hours to cool and set, slices more cleanly after a night in the fridge, and frees up your oven for the turkey.
⏱ 2h 35m★ Medium
Target
You've been asked to bring the pumpkin pie to Thanksgiving and have never made a pie crust or a custard filling from scratch.
Obstacle
The pie gets left in the oven until the center is completely firm, so it cracks and weeps as it cools. Or the blind-bake gets skipped and the bottom crust comes out raw and soggy under the filling.
Expectation
You've baked one full practice pie with a crisp golden crust and a smooth, crack-free filling, and you have notes on exact timings for your oven.
Response Rules
  • When the crust edges are deep golden brown but the filling still needs 15 or more minutes
    →
Cover the rim loosely with a ring of aluminum foil or a pie shield and keep baking.
  • When the timer runs out and the center still ripples like liquid when nudged
    →
Keep baking in 5-minute rounds, checking the jiggle and temperature each time until the center reads about 175°F (80°C).
  • When the dough cracks or tears as you roll or move it into the plate
    →
Press the tear together or patch it with a scrap moistened with a dab of water. If it cracks at the edges while rolling, let it sit at room temperature for 5 minutes first.

Steps
  1. 01
Mix and chill the crust dough
Whisk flour, salt and sugar, cut in the cold butter until pea-sized pieces remain, sprinkle in ice water until a squeezed handful holds, then flatten into a disk, wrap it and refrigerate at least 1 hour (or up to 2 days).
    ⏱ 15 min
  2. 02
Roll out and crimp the crust
Roll the chilled disk on a floured surface to a 12-inch (30 cm) circle about 1/8 inch (3 mm) thick, ease it into the plate without stretching, fold the overhang under and crimp, then chill 30 minutes while the oven preheats to 400°F (200°C) with a rack in the lower-middle position.
    ⏱ 45 min
  3. 03
    Blind-bake the shell
Line the chilled crust with parchment, fill to the rim with weights, bake 15-20 minutes until the edges look dry and pale gold, then lift out the weights, raise the oven to 425°F (220°C) and bake 5 more minutes until the bottom looks dry and matte rather than raw.
    ⏱ 25 min
  4. 04
    Whisk the filling
Whisk pumpkin, brown sugar, spices and salt, then whisk in the eggs and evaporated milk until no orange streaks remain, without whipping in lots of air bubbles.
    ⏱ 10 min
  5. 05
    Bake and check for doneness
Set the warm shell on a rimmed baking sheet in the oven, pour in filling to just below the crimp, bake 15 minutes at 425°F (220°C), then drop to 350°F (175°C) for 35-45 minutes until only a 2-inch (5 cm) center wobbles and it reads about 175°F (80°C), and move it to a rack to cool hands-off for at least 2 hours before slicing.
