Multiple tea tins are stacked without a clear rotation order and several tins have no tasting notes or missing dates.
Tins are often stacked or behind others, labels are worn or missing dates, and it's easy to skip recording notes while brewing.
Oldest tins are moved to the front for next use, each handled tin has a date/brief tasting note recorded, and all tins are returned to proper storage positions.
