Make-Ahead Thanksgiving Dinner Cooking Timeline

by MASTER
Thanksgiving dinner fails on timing, not recipes: one oven, one turkey and six sides can't all happen on Thursday afternoon. Sit down two to four weeks out and turn your menu into a day-by-day countdown so most of the cooking is done before the big day (shift the days if you host on Canadian Thanksgiving Monday or a weekend).

Make-Ahead Thanksgiving Dinner Cooking Timeline

Sort every dish by how long it holds

Most sides taste just as good, or better, made ahead. Only a few things truly need to be cooked on the day. Use these windows as your default:

  • 2–4 weeks, freezer: pie dough discs, turkey stock, baked dinner rolls, crumble or streusel topping.
  • Up to 1 week, fridge: cranberry sauce (keeps about 10 days) and toasted nuts. Bread cubes for stuffing can dry on the counter.
  • 2–3 days: make-ahead gravy from stock and a roux, mashed potatoes, chopped onion/celery/carrot, and green bean casserole without its fried-onion topping.
  • Wednesday: pumpkin and pecan pies, stuffing assembled in its baking dish but unbaked (never stuff the bird ahead), sweet potato casserole without the marshmallows or topping, and the table set.
  • Thursday only: roasting the turkey, baking or reheating the casseroles, finishing the gravy with drippings, and dressing a green salad.

If a dish doesn't fit any window, swap it for one that does, or hand it to a guest.

Work backward from the carving board

Set your serving time first, then count backward. A roast turkey needs to rest 30–45 minutes under loose foil, and that rest is your reheating window.

  • Once the bird comes out, turn the oven up to 375°F (190°C) and bake the casseroles.
  • Take those dishes out of the fridge 30–60 minutes earlier so they aren't fridge-cold, which can add 15–20 minutes to the bake.
  • A full 9x13 in (23x33 cm) dish of stuffing needs 40–50 minutes, longer than most rests. Slide it onto the lower rack for the turkey's last 30 minutes, then finish it at 375°F.
  • A casserole is hot when the center is bubbling or reads 165°F (74°C).

Move everything you can out of the oven:

  • Reheat the mashed potatoes on the stove or in the microwave until steaming. They then hold 2–3 hours in a slow cooker on low or warm with a splash of milk and a knob of butter. Don't heat them up from fridge-cold in the slow cooker itself.
  • Gravy reheats on the stovetop.
  • Rolls warm in the last 10 minutes.

With a fan or convection oven (common in the UK and Australia), drop every temperature by about 25°F (15–20°C).

Turkey math decides your calendar

  • Size: allow 1–1.5 lb (450–700 g) of whole bird per person. Use the higher number if you want leftovers.
  • Frozen or fresh: a frozen bird needs 1 day in the fridge for every 4–5 lb (2 kg).
    • A 16 lb (7 kg) bird goes in by Sunday for Thursday.
    • If you're dry-brining, put it in by Friday, because the salt goes on a thawed bird.
    • This is the step first-timers miss most often.
    • A fresh bird skips thawing. Order it ahead and collect it 1–2 days before; this is the usual route in the UK and Australia.
  • Dry brine: 1–3 days before roasting, rub on about 1 tbsp Diamond Crystal kosher salt per 4 lb (2 kg) of bird. Leave it uncovered in the fridge.
    • Use about half that amount with Morton kosher or fine salt.
    • Skip this for kosher, pre-brined or self-basting birds (the label lists an added solution). They are already salted.
  • Roasting: at 325°F (165°C) an unstuffed bird takes roughly 13–16 minutes per lb, so about 3.5–4.25 hours for 16 lb.
    • Treat that as an estimate only.
    • It's done when an instant-read thermometer shows 165°F (74°C) in the thickest part of the breast and 175°F (79°C) in the thigh.

Options to match your schedule, crowd and oven:

  • Tight schedule: spatchcock a 12–14 lb (5.5–6.5 kg) bird on a large rimmed sheet pan. It roasts in about 80–90 minutes at 425°F (220°C).
  • Six to eight people: a 6–7 lb (3 kg) bone-in turkey breast roasts in about 2–2.5 hours at 325°F (165°C).
  • One oven and a big crowd: roast the turkey the day before.
    • Carve it, refrigerate it in stock within 2 hours, and reheat it covered at 325°F (165°C) until it reaches 165°F (74°C), about 30–45 minutes.
    • This frees the oven on Thursday.

Where to spend effort and where to cut

Put your time into the turkey, the gravy and one standout side. Buying store pie crust, bakery rolls or canned cranberry sauce costs you nothing in praise.

  • Spread the hands-on work so no single day has more than about 2–3 hours of cooking.
  • Check fridge space before you shop. A thawing turkey plus four casseroles won't fit in most fridges.
  • A cooler with ice packs makes a good overflow fridge for drinks and produce.

The plan worked if Thursday morning starts with only the turkey and reheating left to do.

현재
You have a rough Thanksgiving menu in your head but no written plan for which dish gets cooked on which day, when the turkey needs to thaw, or whether your oven can fit everything on Thursday.
난관
The turkey bought frozen the weekend before is still icy in the middle on Thursday morning, because the plan never counted 1 day of fridge thawing per 4–5 lb. Or three cold casseroles all need the oven during the same hour the turkey is still roasting.
기대
A written countdown taped to the fridge shows every dish assigned to a specific day, the turkey thaw and brine dates are on the calendar, and Thursday's oven schedule fits inside the turkey's last half hour and resting window.
대응 지침
  • When the turkey is still icy inside on Wednesday night or Thursday morning
    →
Submerge it, still wrapped and breast-side down, in cold tap water in a clean sink or cooler, change the water every 30 minutes, allow about 30 minutes per lb (about 1 hour per kg), and roast it as soon as it's thawed.
  • When the turkey hits temperature an hour or more before guests are ready to eat
    →
Tent it with foil, wrap the pan in two thick towels and leave it on the counter. It stays hot for about 60–90 minutes, so use that time to reheat sides at 375°F (190°C).
  • When two dishes need the oven at the same time and the temperatures don't match
    →
Run both at the higher temperature on two racks, swap the racks halfway and check them 10 minutes early; or move one to the microwave, slow cooker or stovetop.

  1. 01
Lock the headcount and menu, then size the turkey
Write the final guest count and every dish (including drinks and desserts), then multiply guests by 1–1.5 lb (450–700 g) to get the turkey weight to order, or pick the breast or spatchcock option for a small crowd or tight schedule.
    ⏱ 15분
  2. 02
Tag each dish with its make-ahead window
Write each dish on its own card and mark it freezer, 1 week, 2–3 days, Wednesday or Thursday-only, swapping out or assigning to a guest anything that can only be made last-minute.
    ⏱ 20분
  3. 03
Map Thursday's oven and burner slots backward from serving time
Starting at serving time, place the 30–45 minute turkey rest first, fit casseroles into that rest (starting the stuffing in the turkey's last 30 minutes), and move potatoes and gravy to the stovetop or slow cooker so no two dishes fight for the same rack.

  4. 04
Put thaw, brine and shopping dates on the calendar
Count back from roasting day 1–3 days for dry-brining, then 1 fridge-day per 4–5 lb (2 kg) before that for thawing (or a pickup date 1–2 days out for a fresh bird), and split shopping into a nonperishables run about 10 days out and a fresh-produce run the weekend before.

  5. 05
Write the day-by-day countdown and post it
List each day's dishes with their hands-on time, keep every day under about 3 hours, and tape the sheet to the fridge with Thursday's oven schedule at the bottom.
