Building a Gingerbread House from Scratch

by MASTER· 1 저장· 1 조회
Baking your own gingerbread house gives you sturdier walls and better flavor than most kits, and it makes a great family project from late November through December. Because the dough needs chilling and the pieces need time to harden, a little planning is what keeps it from cracking or caving in.

Building a Gingerbread House from Scratch

Spread it over two days

Most collapses come from rushing. Mix the dough the evening before. It needs at least 2 hours in the fridge and is easier to roll after a night. If you can, bake the pieces a day ahead too, so they dry and harden overnight. That leaves assembly and decorating as one relaxed afternoon with the kids. One batch makes one house with a footprint of about 6 x 5 inches (15 x 13 cm), with scraps left for a door or trees. For a bigger house or two houses, double everything. For a group of kids, make mini houses at half the template size instead. One batch makes about 4, and each child gets their own roof to load with candy. Plan one icing batch per 2 minis if they decorate heavily.

Bake for strength, not softness

  • Construction dough uses very little baking soda so it doesn't puff. Roll it to an even 1/4 inch (6 mm) directly on parchment, so you never have to lift raw pieces and stretch them out of shape. Dough straight from the fridge cracks, so let it sit 10 minutes first. Then chill the cut pieces 10 minutes before baking to keep the edges sharp.
  • A piece is done when the edges are a shade darker and the center doesn't dent when you press it, usually after 12-15 minutes at 350°F (175°C). An underbaked piece bows and sags later, so a couple of extra minutes is the safer mistake.
  • Trim while hot. This is an adult job. Lay the paper template back on each piece the minute it comes out of the oven and recut the edges with a sharp knife. Once it cools, gingerbread snaps instead of cutting, and slightly puffed edges are why walls don't meet.

Glue in stages

Royal icing is your cement. It's right when a peak stands straight up without flopping. It crusts within minutes, so keep the bowl under a damp towel. Put the walls up first and give them 30-60 minutes, until a gentle nudge doesn't move the seams, before adding the roof. Give the roof at least another hour (overnight is ideal) before kids press heavy candy onto it. Sorting candy into bowls fills that wait. Soup cans make good props while things set. With very young helpers, decorate the front and side walls while they lie flat on the table. Let the decorations dry an hour, then assemble. The dough contains raw egg and flour, so keep little fingers out of the unbaked bowl.

Shortcuts and regional swaps

  • Short on time or decorating with toddlers: buy pre-baked kit pieces and make only your own royal icing, which holds far better than kit icing. Graham crackers (or any flat rectangular biscuit outside the US) glued to a milk carton also work for little ones.
  • No meringue powder (common in the UK and Australia): in the UK, royal icing sugar already contains dried egg white and only needs water as the packet says. Otherwise use 2 pasteurized egg whites, 4 cups (480 g) icing sugar and 1/2 tsp lemon juice instead of the powder and water.
  • In the UK, use black treacle for molasses and plain flour for all-purpose. Avoid blackstrap molasses anywhere, as it tastes bitter. In Australia, December heat and humidity soften gingerbread, so bake and assemble somewhere air-conditioned and keep the house out of direct sun.

현재
The family wants a homemade gingerbread house for Christmas but has only a recipe, a pantry and no baked pieces yet.
난관
The dough was rolled unevenly and the pieces were cut after cooling, so the walls didn't meet at the corners. Then the roof went on before the wall icing had set, and its weight pushed the walls apart.
기대
A gingerbread house stands on its board with walls and roof that don't budge when touched, covered in the family's decorations and ready to display through the holidays.
대응 지침
  • When a piece comes out of the oven puffed or spread past its shape
    →
Lay the template on it right away and trim the edges with a sharp knife before it cools, within about 2 minutes.
  • When a wall starts sliding or leaning after you let go
    →
Prop it with a can on each side and wait another 20 minutes; if the icing looks runny, beat in 1-2 tbsp more powdered sugar before piping again.
  • When a baked piece cracks or snaps
    →
Glue the halves together flat with a line of royal icing, let it set 30 minutes, then hide the seam later with a candy border or icing icicles.

  1. 01
    Mix and chill the dough
Cream the butter, brown sugar and molasses, beat in the eggs, then stir in the flour, spices, baking soda and salt until no dry streaks remain; press into two flat disks, wrap them, and chill at least 2 hours or overnight.
    ⏱ 20분
  2. 02
Roll, cut and bake the pieces
Roll each disk to 1/4 in (6 mm) on parchment and cut around cardstock templates (front and back 6 in (15 cm) wide with 4 in (10 cm) walls rising to a 7 in (18 cm) peak, two sides 5 x 4 in (13 x 10 cm), two roof panels 7 x 5 in (18 x 13 cm)), pull away the scraps, chill 10 minutes, bake both sheets at 350°F (175°C) for 12-15 minutes until the centers are firm, and retrim against the templates while hot.

  3. 03
    Whip the royal icing
Beat the powdered sugar, meringue powder and 6 tbsp (90 ml) warm water on medium for 7-10 minutes until a peak stands straight up, then fill a piping bag and keep the rest under a damp towel.
    ⏱ 15분
  4. 04
    Assemble the walls and roof
Pipe a thick line along the bottom and side edges, stand the walls one at a time with cans bracing them, leave them 30-60 minutes until the seams don't shift when nudged, then attach each roof panel and hold it for 2 minutes.

    Decorate the house
Once the roof has set at least an hour, pipe a dab of icing behind each candy and work from the roof down to the walls and then the yard, so drips land on areas you haven't decorated yet.
