Thanksgiving Menu for Guests with Food Allergies and Dietary Restrictions

by MASTER
When vegan, gluten-free or allergic guests are coming, one planning session lets you build a menu everyone can eat from before the pre-holiday rush empties the specialty shelves. Do it as soon as your guest list is firm, ideally 2-3 weeks before the dinner (late November in the US, early October for Canadian Thanksgiving).

Thanksgiving Menu for Guests with Food Allergies and Dietary Restrictions

Sort restrictions by how strict they are

Not every restriction needs the same care, and treating them all as life-or-death wears you out. Put each guest into one of three tiers:

  • Severe allergy or celiac disease: even crumbs or a shared spoon can cause a reaction. Cross-contact matters, and you check every label.
  • Intolerance, such as lactose: the amount matters more than crumbs. Skip the ingredient in their dishes, but shared utensils are usually fine.
  • Choice-based diets, such as vegan or vegetarian: no hidden animal products like chicken stock, butter, gelatin in marshmallows or anchovy in Worcestershire sauce. Crumbs aren't a safety issue.

Ask before you plan recipes, because the tier decides how much work every later step takes. In the US the major allergens are the Big 9: milk, egg, wheat, soy, peanuts, tree nuts, fish, shellfish and sesame. The UK, Australia and Canada each have their own longer lists, with items like celery, mustard or lupin depending on the country, so ask guests to name their exact triggers rather than guessing.

Make the shared version the safe version

The biggest first-timer mistake is cooking two versions of everything. Instead, make most sides safe by default so everyone eats the same dish. Aim for each restricted guest to have a main, at least 3 sides and a dessert they can eat. Common swaps:

  • Gravy: thicken with cornstarch instead of flour, about 1 tbsp (8 g) per 1 cup (240 ml) of gluten-free stock. Whisk it into an equal amount of cold water first, stir it into the simmering stock, and simmer 1-2 minutes until it turns glossy and coats the back of a spoon; long boiling thins it again. Make a separate vegetable-stock gravy only if you have vegan guests.
  • Mashed potatoes: use olive oil or plant butter and unsweetened plant milk. Check these against your list, because many plant butters contain soy or nut oils and plant milks are often soy, almond or oat. Use soy or rice milk for a celiac guest (some oat milks aren't certified gluten-free) unless someone is allergic to soy.
  • Stuffing: make it with gluten-free bread cubes dried in a 250°F (120°C) oven for about 30 minutes or left out overnight, because fresh gluten-free bread turns to mush; store-bought gluten-free stuffing cubes skip this. Bake it in a dish, never inside the bird, since stuffing inside the turkey contaminates the meat for anyone avoiding gluten or dairy.
  • Green bean casserole: replace canned fried onions, which contain wheat, with oven-roasted shallots or a gluten-free crispy onion product.
  • Pumpkin pie: use full-fat canned coconut milk 1:1 in place of evaporated milk for a dairy-free pie. For a vegan pie, also replace the 2 eggs with 2 tbsp (16 g) cornstarch whisked into the coconut milk; it's done when the edges are set and the center still jiggles slightly, and it firms up after at least 4 hours in the fridge. Ask nut-allergic guests whether coconut is OK for them. For a gluten-free pie, use a store-bought gluten-free crust or bake it crustless.

For a vegan main, choose one of three options. A store-bought plant-based roast is the least work. A stuffed squash costs the least. A lentil loaf suits you if you like cooking from scratch. Plan about 6 oz (170 g) per vegan guest plus 50% extra, because other guests will want to try it. If you have only one or two restricted guests and little time, it's fine to ask each of them to bring one dish they love, and then cover the sides yourself.

Hidden ingredients and cross-contact

Most trouble comes from ingredients you didn't know were there. Check these labels:

  • bouillon and stock
  • soy sauce, which usually contains wheat (use tamari labeled gluten-free)
  • self-basting or pre-brined turkeys, whose solution can contain wheat or dairy
  • dinner rolls
  • pie fillings
  • salad toppings with nuts

US labels show a Contains line, and UK labels bold allergens in the ingredient list. Precautionary may contain warnings are voluntary, so a missing warning doesn't prove a product is safe for a severe allergy. Keep the packaging of every product you use so guests can read it themselves.

On cooking day, prepare the allergen-free dishes first on a clean counter. Cover them, and give them their own serving spoons. Flour dust and shared colanders or toasters are the usual cross-contact culprits. If you have a guest with a tree nut allergy, swap pecans in salads for toasted pumpkin seeds. Then decide whether pecan pie stays on the menu at all.

How to know the plan works

Before you shop, send your final menu to each restricted guest, with brands and key ingredients for their safe dishes. The plan is ready when every one of them replies that they're fine with it. At the table, put a tent card on each dish listing what it's free of and what it contains. Let restricted guests serve themselves first so spoons haven't wandered between dishes.

You know some of your Thanksgiving guests are vegan, gluten-free or allergic, but you don't yet know their exact triggers or which dishes on your usual menu they can safely eat.
난관
The host adapted the obvious dishes but missed a hidden ingredient, such as wheat in the stock or soy sauce, or stuffing cooked inside the turkey, so the gluten-free guest still couldn't eat the gravy or the meat. Or the host asked 'any dietary restrictions?' and got back 'I'm gluten-free', without learning that the guest has celiac disease and reacts to crumbs.
기대
Every restricted guest has confirmed a main, at least 3 sides and a dessert they can eat, and you have a shopping list with label checks and a cooking order that keeps their dishes free of cross-contact.
대응 지침
  • When a guest says they're gluten-free or allergic but doesn't say how serious it is
    →
Ask directly whether a shared spoon or crumbs would make them sick, and plan cross-contact precautions only if they say yes.
  • When another guest offers to bring a dish that contains a restricted guest's allergen
    →
Accept it, ask them to bring its own serving spoon and a card listing the ingredients, and place it at the end of the buffet away from the safe dishes.
  • When a guest has an anaphylactic allergy and you can't guarantee a dish is free of cross-contact
    →
Tell them honestly which dishes you're unsure about, and invite them to bring their own plate or one shared dish they trust.
